Mixed Berry Pudding
with Bananas & Granola
We’re crazy about this for a snack or breakfast. It’s a
mixed berry puree poured over bananas, with a touch
of creamy almond milk, page 63, and a few pieces of
our buckwheat granola, page 62. The frozen mix we
get has raspberries, strawberries, marionberries, and
blueberries, and is a welcome gift in winter.
The sauce is bursting with mouth watering, sun-
colored taste—and it almost tastes like eating
perfume. The color is a deep, velvety, magenta. We
can’t seem to get enough of it!
Berries have a low glycemic rating, are rich in
antioxidants, phytochemicals, flavonoids, and
Vitamin C.
