Marinated Pickellini Appetizers
Our taste buds really wake up with this piquant and 1 zucchini
crunchy little appetizer. Each Pickellini is almost bite- 1 teaspoon olive oil
sized, so they make perfect finger food, or for eating 1 small clove garlic
with a fork. Great for party food too—make lots! 1/4 teaspoon dill
1/4 teaspoon pickling spice
The cucumbers, carrots, and parsnips are marinated Freshly cracked black pepper
first, then rolled up in super finely sliced zucchini Few shakes Himalayan salt
strips, coated with garlic and a touch of olive oil. 1 tiny shake cayenne
Unpasteurized apple cider vinegar
Ingredients: Makes 6 Pickellinis Pure water
Use a julienne slicer to make matchstick veggies
and a good peeler for the zucchini strips. We use Rinse, scrub or peel carrots, cucumber, and parsnip.
