Sunfower Seed Side Salad or Appetizer





Serve delightful little bowls of deliciously
flavored, protein-rich sunflower seeds to
start your meal, or to sprinkle on top of
the other dishes. The seeds are soaked for
a few hours to make them soft and moist,
and to activate the life-giving enzymes in
the seeds. The lemon juice, green onions,
and ginger, gives robust taste, tang, and
kick. The Coconut Aminos add a salty
taste, but is actually very low in sodium.


Ingredients: serves 4
1 cup dry, raw, sunflower seeds
3 cups pure water
3 tablespoons chives or green onions,
minced
1 and 1/2 tablespoons Coconut Aminos
2 teaspoons Spectrum Walnut oil
2 teaspoons finely grated ginger root
Juice of 1/2 to 1 lemon
1 small clove garlic, pressed





Directions
Soak sunflower seeds in pure water for 4
hours.
Drain and give a rinse with pure water.
Drain well.
Transfer to a mixing bowl.
Mince green onions and finely grate ginger
root and add to seeds.
Add oil, lemon, Coconut Aminos, and
garlic. Mix ingredients well.


Spoon into small individual bowls.
